Baked Jamaican Chicken Recipe
Take 4 chicken quarters place in a bag with diced pineapple and a table spoon of Jammin Jamaican spice blend. Shake it up and leave for at least four hours.
Pre heat the oven to gas mark 6 or the equivalent in electric.
Place in a casserole dish and bake in the oven for 30mins covering in foil so not to lose the juices
Accompany with coconut ,lemon rice and peas
Boil rice in half Coconut milk half water. When tender strain and stir in a cup full of peas. Add salt, pepper and fresh lemon zest. Blend together and cover keep warm until chicken is ready to remove from the oven.
Serve rice on a bed of fresh spinach, place the chicken on the rice and drizzle pineapple pieces and juice over.
