Rogan Josh
A fruity curry blend of garlic, cinnamon, coriander, paprika, chilli, salt, cardamom, ginger and cumin. This powder works well as a marinade, a baked curry or a pot curry. Keep a pot of this powder if you want a deeply flavoured seasoning for meats and soya. Cook with yoghurt and plum tomatoes. Amchoor or mango powder is sometimes added for an extra fruitiness to this blend. Try this recipe for a quick and easy meal idea:
Lamb Rogan Josh
You will need:
2 tbs oil
2 red onions, chopped
1 tbs Nature Kitchen Rogan Josh Spice Blend
1 tsp tomato puree
450g (1lb) lamb shoulder, cooked and diced
200ml (7oz) water
4 tomatoes, quartered
Juice of 1 lemon
Sea salt to season
Pilau rice to serve
Instructions:
1. Heat the oil in a large heavy-based saucepan, add the onions and the Rogan Josh Spice Blend and cook for 10 minutes.
2. Add the tomato puree and cook for a further minute.
3. Add the diced lamb, water, tomatoes and lemon juice.
4. Simmer for 15 minutes, then season to taste and serve with Pilau Rice.
