Baharat

Baharat, which simply means "spice" in Arabic, is an all-purpose seasoning used in Middle Eastern cuisine. Although the particular blend varies by region and household, it always includes black pepper and typically has cumin, cinnamon and cloves, among other spices.

Aromatic, warm and sweet, a pinch of baharat can add depth and flavour to soups, tomato sauces, lentils, rice pilafs, and cous cous. It can also be used as a rub for fish, poultry and meat; mixed with olive oil and used as a vegetable marinade; and blended with garlic, parsley, and olive oil to make a condiment paste. Try this recipe as a quick meal idea:

Baharat Chicken

You will need:

6 large chicken thighs, boneless and skinless
3 garlic cloves, crushed
1 heaped tbsp Nature Kitchen Baharat Spice Blend
Juice 1/2 lemon
Pitta bread, to serve
Coriander, to serve
Plain yoghurt, to serve

Instructions:

1. Cut each thigh into strips and place in a bowl. Sprinkle with the garlic and Baharat spice. Mix well and leave to marinade in the fridge for at least an hour (up to 6 hours).

2. Using two metal skewers about 5cm apart, thread a quarter of the meat onto the skewers. Repeat, making 4 pairs of skewers in total. Make sure the chicken is packed quite tightly.

3. Heat the oven to 220C (Gas Mark 9). Sear the skewers in a hot frying pan, then transfer to the oven. Roast until golden and cooked (about 15 minutes).

4. Rest for 5 minutes and squeeze over lemon juice. Serve in pitta pockets with coriander, yoghurt and salad.
