Allspice Berries
Allspice Berries
Allspice is one of the most important ingredients of Caribbean cuisine. It is used in Caribbean jerk seasoning (the wood and bark of the tree are used to smoke jerk in Jamaica).
When using this spice usually when whole it is thrown in during the cooking then taken out afterwards, but when ground it can mixed in sparingly to add that great flavour. The quality of the food will be tasty and delicious if this spice is infused. The Caribbean use Allspice during jerk seasoning, and in pickling. Also very popularly used in curry blends to add a certain earthy aroma to it, or more recently we are finding it being used lots in commercial sausage companies to add that little bit of something extra.
The name Allspice started being used in the early 100's by the English, who thought it combined the flavour of cinnamon, nutmeg, and cloves. The unrelated fragrant shrubs are called Carolina allspice or wild allspice. The fruits are harvested when it is green and are dried under the sun for some time. Allspice has longer shelf life than the powdered product and has a aromatic flavour.
